Coconut Chutney

Ingredients:
  • Shredded Coconut - 1 cup
  • Green Chilly - 1 or 2 nos
  • Curry Leaf - 1 sprig
  • Ginger - 1 tsp finely chopped
  • Water as needed
  • Coconut Oil - 2 tbsp
  • Mustard Seeds - 1 tsp
  • Salt to taste
Method:
  • Add shredded coconut, 1 green chilly, 3-4 curry leaves, salt to taste, ginger and 2 tbsp water to mixer jar and grind well. Care to be taken not to add water together at once. Add gradually to get a smooth chutney. 
  • Add water to the ground smooth chutney as per the consistency required.
  • Heat coconut oil in a saucepan and add mustard seeds. Let it splutter.
  • Add curry leaves and one green chilly(optional).
  • When the curry leaves become crisp, add the ground chutney and simmer. Let it cook for 5mins but do not let it boil.
  • Switch off the stove and serve with Dosa or Idli.
