- Shredded Coconut - 1 cup
- Green Chilly - 1 or 2 nos
- Curry Leaf - 1 sprig
- Ginger - 1 tsp finely chopped
- Water as needed
- Coconut Oil - 2 tbsp
- Mustard Seeds - 1 tsp
- Salt to taste
Method:
- Add shredded coconut, 1 green chilly, 3-4 curry leaves, salt to taste, ginger and 2 tbsp water to mixer jar and grind well. Care to be taken not to add water together at once. Add gradually to get a smooth chutney.
- Add water to the ground smooth chutney as per the consistency required.
- Heat coconut oil in a saucepan and add mustard seeds. Let it splutter.
- Add curry leaves and one green chilly(optional).
- When the curry leaves become crisp, add the ground chutney and simmer. Let it cook for 5mins but do not let it boil.
- Switch off the stove and serve with Dosa or Idli.
