Ghee Rice / നെയ്യ് ചോറ്

Ingredients:
  • Basmati Rice / Jeerakasala Rice - 1 cup
  • Ghee - 1 tbsp
  • Onion - 1/2 of a small
  • Cardomom - 1 
  • Cloves - 1 or 2
  • Cinnamon - 1 small piece
  • Cashews+Kismis+Fried Onions - a few for garnishing
  • Salt to taste
  • Lemon Juice - 1 tbsp
  • Boiling water - 1 1/2 cup
Method:
  • Wash and soak rice for 20-30minutes.
  • Heat ghee in a pressure cooker. Add think sliced onion and whole spices and saute till onions fade.
  • If using basmati rice, add drained rice to the sauted onions and fry for a minute. Add boiling water. If using jeerakasala rice, add water followed by drained rice.
Using Basmati
  • Add salt and lemon juice and mix well.
  • Pressure cook on medium flame for one whistle. 
  • Let the pressure release by it's own. Garnish with fried onions, cashews and kismis.
