Chinese Fried Rice (Veg/Egg/Chicken) / ചൈനീസ് ഫ്രൈഡ്‌ റൈസ്

Ingredients:
  • Jeerakasala Rice / Jasmine Rice - 1 cup
  • Beans, Carrot, Cauliflower, Green Peas, Bell Peppers - 1 cup
  • Eggs - 2 nos (Optional)
  • Chicken - 200gm (Optional)
  • Spring Onion - 4 nos
  • Garlic - 2 cloves
  • Red Chilly Sauce - 1 tbsp
  • Green Chilly Sauce - 1 tsp
  • Soya Sauce - 2 tsp
  • Sugar a pinch
  • Black Pepper Powder - 2 tbsp
  • Oil - 2 tsp + 1 tbsp
  • Salt to taste
  • Water for boiling rice
#For chicken marination (Optional)
  • Egg - 1 
  • Black Pepper Powder - 1 tbsp
  • Kashmiri Red Chilly Powder - 1 tbsp
  • Vinegar - 1 tsp
  • Soya Sauce - 1 tsp
  • Salt to taste
Method:
  • Bring atleast 4 cups water to vigorous boil in a saucepan. Add 2 tsp salt and 2 tsp oil in boiling water (Adjust salt to make a little bit salty before adding oil).
  • Add washed and drained rice to the vigorously boiling water and cook on high heat for 5-8mins or until 85% done. 
  • Switch off the stove and keep it covered for 2minutes allowing it to complete cooking.
  • Drain water from cooked rice and keep it aside to cool for atleast 10mins.
  • Finely chop all the vegetables of your choice, garlic, spring onion whites and greens.

  • Optional - Heat oil in a pan. Add two eggs and scramble with black pepper powder and salt to taste. Keep aside.

  • Optional - Cut cleaned chicken to small pieces. Add ingredients mentioned below marination and marinate for 15mins in freezer. Heat oil for deep frying and fry till golden brown.
  • Heat oil in a wide pan. Make sure to keep on high heat throughout the cooking process.
  • Add finely chopped garlic and saute for a minute.
  • Add all the veggies together to the oil. Stir continuously for 2-5mins. 
  • Add black pepper powder, a pinch of salt, sugar and stir well. Be careful not to burn the veggies as the flame is high.
  • Add all the sauces listed and give it a quick mix.
  • Let it cook for a couple more minutes. Further add drained rice and mix well to combine.
  • Optional - Add chicken pieces/scrambled eggs at this stage if chicken/egg fried rice.
  • Switch off the flame and garnish with spring onion greens.
