- Jeerakasala Rice / Jasmine Rice - 1 cup
- Beans, Carrot, Cauliflower, Green Peas, Bell Peppers - 1 cup
- Eggs - 2 nos (Optional)
- Chicken - 200gm (Optional)
- Spring Onion - 4 nos
- Garlic - 2 cloves
- Red Chilly Sauce - 1 tbsp
- Green Chilly Sauce - 1 tsp
- Soya Sauce - 2 tsp
- Sugar a pinch
- Black Pepper Powder - 2 tbsp
- Oil - 2 tsp + 1 tbsp
- Salt to taste
- Water for boiling rice

- Egg - 1
- Black Pepper Powder - 1 tbsp
- Kashmiri Red Chilly Powder - 1 tbsp
- Vinegar - 1 tsp
- Soya Sauce - 1 tsp
- Salt to taste
Method:
- Bring atleast 4 cups water to vigorous boil in a saucepan. Add 2 tsp salt and 2 tsp oil in boiling water (Adjust salt to make a little bit salty before adding oil).
- Add washed and drained rice to the vigorously boiling water and cook on high heat for 5-8mins or until 85% done.
- Switch off the stove and keep it covered for 2minutes allowing it to complete cooking.
- Drain water from cooked rice and keep it aside to cool for atleast 10mins.
- Finely chop all the vegetables of your choice, garlic, spring onion whites and greens.
- Optional - Heat oil in a pan. Add two eggs and scramble with black pepper powder and salt to taste. Keep aside.
- Optional - Cut cleaned chicken to small pieces. Add ingredients mentioned below marination and marinate for 15mins in freezer. Heat oil for deep frying and fry till golden brown.
- Heat oil in a wide pan. Make sure to keep on high heat throughout the cooking process.
- Add finely chopped garlic and saute for a minute.
- Add all the veggies together to the oil. Stir continuously for 2-5mins.
- Add black pepper powder, a pinch of salt, sugar and stir well. Be careful not to burn the veggies as the flame is high.
- Add all the sauces listed and give it a quick mix.
- Let it cook for a couple more minutes. Further add drained rice and mix well to combine.
- Optional - Add chicken pieces/scrambled eggs at this stage if chicken/egg fried rice.
- Switch off the flame and garnish with spring onion greens.
