Chettinadu Masala

Ingredients:

  • Coriander Seeds - 3 tbsp
  • Whole Peppercorns - 1 tbsp
  • Cumin Seeds - 1/2 tsp
  • Fennel Seeds - 1 tsp
  • Red Chilly - 3 to 4 nos
  • Kashmiri Red Chilly - 5 to 6 nos (Or 2 tbsp powder)
  • Mustard Seeds - 1/4 tsp
  • Cinnamon Sticks - 2 to 3 nos
  • Cardomom - 2 to 3
  • Cloves - 2 to 3
  • Star Anise - 1 big or 2 small
  • Curry Leaves - a few
Method:
  • Take a wide heavy bottom kadai and dry roast everything till nice aroma spreads.
  • Let it cool down.
  • Transfer to a mixer jar and grind to a semi coarse mix.

  • Store in airtight container for upto a week (Haven't tried storing longer).
