Nankhatai

Ingredients:
  • All Purpose Flour / Whole Wheat Flour - 1 cup
  • Sugar - 1/2 cup
  • Unsalted Butter - 1/2 cup
  • Baking Soda - 1/8 tsp
  • Cardomom Powder - 1 tsp
  • Salt to taste 
  • Cashews / Pistachios, halved - to decorate
Method:
  • Sieve flour with salt, cardomom powder, baking soda and keep aside.
  • Beat butter until fluffy in a mixing bowl. Add sugar to the beated butter.
  • When the mixture becomes creamy, add the dry ingredients and gently fold it in one direction. Do not overmix.
  • Mix to a smooth dough.
  • Grease a pan with butter or ghee. Make small dough balls and keep it on the pan with atleast one inch gap in between. 
  • Press gently to flatten and place nuts of your choice to decorate.
  • Bake in preheated oven at 180°C (355°F) for 15-25mins or till done. 
  • Nankhatais will be soft when hot. Let it cool down on racks to room temperature to harden.
