Serves 2
Ingredients:
- Carrot - 1/2 cup
- Sugar - 2 tbsp
- Vanilla Ice-cream - 1 scoop (Optional)
- Chilled Milk - 1/2 to 3/4 cup
- Frozen Milk - 1 cup (Optional. If not using frozen milk, increase the quantity of chilled milk)
- Cardamom Powder or Vanilla Essence - 1/2 tsp (Optional)
- Cashews - a few (Optional)
Method:
- Roughly chop/grate carrots and add to a mixer jar. Add 1/4 cup chilled milk and pulse it for few times to get a smooth paste.
- Add frozen milk, essence/cardamom powder and sugar as per taste. Blend everything well.
- Add rest of the chilled milk and blend. Adjust sweetness to taste.
- Transfer to a serving glass. Top it with nuts and a scoop of ice-cream.
