- Raw Rice - 4 cups
- Cooked Rice - 1 cup
- Instant Yeast - 1/2 tsp
- Shredded Coconut - 1 1/2 cup
- Coconut Water - 1 1/2 to 3 cups
- Sugar - 2 tbsp
- Salt to taste
Method:
- Wash rice well till water runs clear. Soak washed rice for 5hours.
- Drain water from soaked rice and add to a mixer jar to grind to a smooth batter adding few tbsp of coconut water at a time in batches. Do not overload the mixer jar.
- Further grind instant yeast, shredded coconut, sugar, cooked rice with little coconut water to a smooth paste adding salt and sugar.
- Transfer to a single big container or multiple containers for fermentation. Batter will be at-least twice after fermentation. So make sure the container is big enough to avoid spilling.
- Mix the fermented batter gently and adjust salt and sugar.
- Heat dosa tawa on medium flame.
- Add ladleful of batter to the tawa. Spread the batter to slightly thick as shown.
- When pores appear, cover and cook for 30seconds - 1minute or till top side is cooked well.
- Serve hot with curry of your choice.
