Vellayappam with coconut water

Ingredients:
  • Raw Rice - 4 cups
  • Cooked Rice - 1 cup
  • Instant Yeast - 1/2 tsp
  • Shredded Coconut - 1 1/2 cup
  • Coconut Water - 1 1/2 to 3 cups
  • Sugar - 2 tbsp
  • Salt to taste
Method:

  • Wash rice well till water runs clear. Soak washed rice for 5hours.  
 
  • Drain water from soaked rice and add to a mixer jar to grind to a smooth batter adding few tbsp of coconut water at a time in batches. Do not overload the mixer jar. 
  • Further grind instant yeast, shredded coconut, sugar, cooked rice with little coconut water to a smooth paste adding salt and sugar. 



 
  • Transfer to a single big container or multiple containers for fermentation. Batter will be at-least twice after fermentation. So make sure the container is big enough to avoid spilling. 

 
  • Mix the fermented batter gently and adjust salt and sugar.   
  • Heat dosa tawa on medium flame.  
  • Add ladleful of batter to the tawa. Spread the batter to slightly thick as shown. 
  • When pores appear, cover and cook for 30seconds - 1minute or till top side is cooked well. 
  • Serve hot with curry of your choice.
