Eggless Ghee Cake


Ingredients:

  • Ghee - 1/2 cup
  • Powdered Sugar - 1/2 to 1 cup
  • Curd - 1/2 cup minus 2 tbsp
  • Vanilla Essence - 1/2 tsp (Optional)
  • Maida - 1 cup
  • Baking Powder - 1 tsp
  • Baking Soda - 1/4 to 1/2 tsp
  • Milk - 1/4 cup


Method:
  • Preheat a thick bottom vessel on medium-high flame - OR - Preheat oven at 350F or 180C.
  • Line a baking tray with parchment or foil paper and keep aside. Do not skip lining on the bottom even if not lined on sides of the tray.
  • Sieve maida with baking powder, baking soda and salt twice and keep aside.
  • Start beating ghee with powdered sugar and curd with an electric beater on low speed and gradually increase to high speed, and beat till creamy. Add vanilla essence if using, at this stage and beat for few seconds.
  • Fold the dry ingredients to the wet ingredients in batches and gently mix to combine. Stop mixing once it is combined.
  • Add milk gradually to the batter and mix to get a ribbon consistency batter.
  • Transfer the batter to the lined and greased baking tray.
  • Bake in preheated oven or vessel for 35-40 minutes or till a skewer inserted comes out clean.
  • Let it cool down a bit before de-moulding the cake from tray. 
  • Cool on a wire rack and cut to desired pieces.
